Production AI is the part nobody demos: typed contracts, evals on a 50–600-prompt gold set gated through Promptfoo CI, OpenTelemetry traces, a runbook your on-call can read at 3am. The model stays swappable — Claude Opus 4.8 / Sonnet 4.6 / Haiku 4.5 hosted, Mistral Small 3.2 (Apache 2.0) on-prem.
